Instructions
- Preheat your oven to 350°F (if you want warm croissants) or simply have the croissants at room temperature for a cold sandwich.
- Carefully slice each mini croissant in half horizontally with a serrated knife to create a top and bottom piece.
- Cut thin slices of sharp cheddar. Layer enough slices to cover the bottom half of each croissant without overlapping too much.
- Core and thinly slice the Honeycrisp apple. Arrange the apple slices in a single layer over the cheddar on each croissant.
- Spread Dijon mustard very lightly on the inside of the top half of each croissant, using as much or as little as you like based on your taste for sharpness.
- Place the croissant tops over the layered bottoms to form the sandwiches. If desired, warm the assembled sandwiches in the oven for 2 to 3 minutes until the cheese just begins to soften and the croissant is slightly crisp.
- Rinse and dry the mini cucumbers. Slice them into thin rounds or spears and arrange them on a plate to serve alongside the sandwiches for a crunchy side.
Tips
- Layer the cheddar directly on the croissant so it will slightly melt if warmed.
- Use a mandoline or sharp knife to get uniform, thin apple slices for better texture.
