Instructions
- Preheat your oven to 425°F. Line a large sheet pan with parchment paper or aluminum foil for easier cleanup if you prefer.
- Pat the chicken drumsticks dry with paper towels. Place them on the sheet pan, leaving space between each piece.
- Rub the drumsticks all over with olive oil (about 1 tablespoon per 4 drumsticks). Season with salt, pepper, and sprinkle evenly with 1 teaspoon rosemary or thyme.
- Peel the sweet potatoes and cut them into 1-inch cubes. Add them to the pan around the chicken.
- Core the pears and slice them into thick wedges (about 1/2 inch thick). Add the pears to the sheet pan with the sweet potatoes.
- Drizzle the sweet potatoes and pears with olive oil, sprinkle with salt, and toss to coat them lightly. Make sure everything is in a single, even layer for even roasting.
- Roast in the preheated oven for 30 to 35 minutes. Halfway through roasting, use tongs to flip the drumsticks and gently toss the sweet potatoes and pears for even browning.
- Check that the chicken is cooked through; the juices should run clear and an instant-read thermometer should read 165°F at the thickest part. Sweet potatoes should be tender when pierced, and pears lightly caramelized.
Tips
- If using dried herbs instead of fresh, use 1/2 teaspoon since the flavor is more concentrated.
- You can prep the sweet potatoes and pears the night before and keep them in airtight containers in the fridge.
