Instructions

  1. Remove the lamb loin chops from the refrigerator and let them sit at room temperature for 10 minutes while you prep the vegetables.
  2. Cut the cauliflower into small bite-size florets. Heat a large skillet over medium-high heat, add a drizzle of olive oil, then add the cauliflower. Season with salt and pepper. Cook, stirring occasionally, for 8 to 10 minutes until the cauliflower is golden brown and just tender when pierced with a fork. Transfer to a plate and keep warm.
  3. While the cauliflower cooks, slice the mini cucumbers into thin rounds. Place them in a bowl with the plain Greek yogurt, the chopped fresh mint, a squeeze of lemon juice, and a pinch of salt. Toss gently to combine and set aside in the refrigerator until ready to serve.
  4. Pat the lamb chops dry with paper towels. Season both sides generously with salt and pepper.
  5. Wipe out the skillet and return it to high heat. Add a splash of olive oil. When the oil is shimmering and just starting to smoke, lay in the lamb chops. Sear for 3 to 4 minutes on the first side without moving them, until a deep brown crust forms. Flip and sear the second side for another 3 to 4 minutes for medium-rare.
  6. Transfer the lamb chops to a plate and cover loosely with foil. Let them rest for 5 minutes to retain their juices.
  7. To serve, arrange the sautéed cauliflower and the chilled cucumber salad on plates, then add the rested lamb chops alongside.
