Instructions
- Preheat your oven to 325°F. Cut the pork shoulder into 1- to 1.5-inch cubes. Pat dry and season all over with salt and pepper.
- Heat 1 to 2 tablespoons of oil in a Dutch oven over medium-high heat. Add the pork cubes in a single layer and brown on all sides, working in batches if needed, about 6-8 minutes total. Transfer browned pork to a plate.
- Dice the yellow onion. Add it to the Dutch oven (add a splash more oil if needed). Sauté, stirring often, until onion is soft and translucent, about 3-4 minutes. Scrape up any browned bits from the pot.
- Peel the winter squash and cut it into roughly 1-inch cubes. Add the pork and squash to the Dutch oven. Pour in 1 cup chicken broth (reserving the other cup) to almost cover the solids. Bring to a simmer.
- Cover the pot and transfer to the oven. Braise for 45 minutes, or until pork and squash are both very tender when pierced with a fork.
- While the pork braises, bring the remaining 1 cup of chicken broth in a small saucepan to a boil. Stir in the grits, season with salt and pepper, then reduce heat to low. Cover and cook, stirring occasionally, until grits are tender and creamy, about 15-20 minutes (longer for coarse cornmeal).
- Once the grits are cooked, stir in the grated Swiss cheese (to taste) until melted and smooth. Adjust seasoning with salt and pepper if needed.
- To serve, spoon the cheesy grits onto plates, then top with the braised pork and squash along with a bit of braising liquid.
Tips
- Pork is done when it easily breaks apart with a fork and the squash is tender.
- If the braising liquid reduces too much, add a splash of water to keep it saucy.
