Instructions
- Wash the honeycrisp apple thoroughly under running water. Pat dry with a clean towel.
- Using a sharp knife, core the apple and dice it into small, even pieces, about 1/2-inch square. Set aside.
- Rinse the jumbo blueberries gently under cool water. Pat them dry with a towel or paper towel.
- Open the two single-serve Greek yogurts and give each a quick stir to ensure they are creamy and smooth.
- In two clear glasses or parfait cups, spoon half of one yogurt container into the bottom of each glass.
- Layer a generous spoonful of diced apples over the yogurt in each glass, then add a layer of jumbo blueberries on top of the apples.
- Add half of the granola (1/4 cup) to each glass, sprinkling it over the fruit.
- Spoon the remaining yogurt evenly over the top of the granola in both glasses, smoothing slightly.
- Finish by drizzling honey over each parfait to taste, using about 1 to 2 teaspoons per serving.
- Serve the parfaits immediately so the granola stays crunchy.
Tips
- For a softer texture, let parfaits sit for 5 minutes before eating so the granola absorbs some moisture.
