Instructions
- Preheat your toaster or oven to 375°F. Place the multigrain bread slices on a baking sheet or in the toaster and toast for about 4–6 minutes, until crisp and golden brown.
- While the bread toasts, halve the avocados. Remove the pits and scoop the flesh into a small bowl. Mash the avocado with a fork until mostly smooth, leaving some small chunks for texture.
- Squeeze the juice from half a lemon over the mashed avocado and stir well to combine. Season with black pepper to taste.
- Wash the mini cucumbers, then slice them into thin rounds.
- When the toast is ready, remove from the oven or toaster and let cool slightly. Spread the mashed avocado mixture evenly over each slice of toast.
- Arrange the sliced cucumbers over the avocado, slightly overlapping for full coverage.
- Top each toast with an even amount of cold-smoked salmon, draping or folding the salmon for a generous layer.
- Finish with a final crack of black pepper before serving.
Tips
- If you want to prep ahead, slice cucumbers and mash avocado with lemon juice up to 2 hours before serving. Keep covered to prevent browning.
