Instructions
- Preheat your oven to 425°F. Line a large baking sheet with parchment or foil for easy cleanup if desired.
- Wash and dry the fingerling or baby potatoes. Slice each lengthwise in half. Toss potatoes with 1 tablespoon olive oil, salt, and pepper directly on the baking sheet. Spread them out cut-side down in a single layer.
- Roast potatoes in the oven for 20 to 25 minutes, flipping halfway through, until golden and fork-tender.
- While the potatoes roast, wash the kale well, pat very dry, and tear the leaves off the stems. Discard tough stems. Chop the leaves into bite-sized pieces and place in a large bowl.
- Cut the lemon in half. Squeeze the juice of one half over the kale. Add a drizzle (about 1 tablespoon) of olive oil, salt, and pepper. Toss very well, massaging the kale with your hands for 1 to 2 minutes until it softens and turns glossy. Set aside.
- Pat the salmon fillets dry with a paper towel. Season both sides with salt and pepper.
- Heat a large nonstick or well-seasoned skillet over medium-high heat. Add a little olive oil if the skillet is not nonstick. When the pan is hot, add the salmon fillets, skin side down if present. Sear for 3 to 4 minutes, then flip and cook for another 3 to 4 minutes, until the salmon feels just firm and flakes easily with a fork.
- Serve the salmon with the roasted potatoes and lemon-dressed kale. If desired, cut the remaining lemon half into wedges to squeeze over the salmon at the table.
Tips
- You can tell the salmon is done when it is opaque, no longer translucent in the center, and flakes easily with a fork.
